  • 3 cups broccoli florets
  • ¼ cup white apple vinegar
  • ½ cup heavy cream
  • 2 shallots, chopped
  • 3 cloves garlic, minced
  • 1 ½ teaspoons smoked paprika
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons unsalted butter
  • ¼ cup chicken stock
  • 1 teaspoon dried thyme
  • 1 ½ tablespoons freshly squeezed lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Season chicken thighs with smoked paprika, salt, and pepper.
  2. Sear chicken in a skillet until golden brown on both sides; set aside.
  3. In the slow cooker, combine halved potatoes, vinegar, stock, shallots, garlic, thyme, salt, and pepper.
  4. Place seared chicken on top of the potato mixture.
  5. Cook on low for 5 to 6 hours; add broccoli 30 minutes before serving.
  6. Whisk together cream and cornstarch; stir into the slow cooker and cook on high for an additional 10 to 15 minutes until thickened.
