  • 2 lbs beef chuck or stew meat, cut into bite-sized pieces
  • Salt and pepper to taste
  • 1 tbsp vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tsp curry powder (or your favorite curry blend)
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp chili flakes (optional)
  • Coconut milk (added during cooking)

Instructions

  1. Sear the seasoned beef in a heavy-bottomed pot until browned on all sides. Remove and set aside.
  2. In the same pot, sauté chopped onion until translucent, then add garlic and ginger until fragrant.
  3. Stir in spices to coat onions evenly.
  4. Return beef to the pot and add enough water or broth to cover halfway. Bring to a simmer and reduce heat to low.
  5. Cover and cook for at least 2 hours until beef is tender; add coconut milk during the last 30 minutes if desired.
