  • ½ quart sunflower oil (for frying)
  • 1 pound spaghetti
  • 2 tablespoons extra virgin olive oil
  • 2 cups grated parmesan cheese
  • 1 cup chopped fresh basil
  • Kosher salt (to taste)

Instructions

  1. Heat sunflower oil in a large pot over medium-high heat until boiling.
  2. Fry the zucchini slices until golden brown (about 5-6 minutes). Remove with a slotted spoon and drain on paper towels.
  3. In a bowl, combine fried zucchini with chopped basil and a pinch of salt. Drizzle with olive oil.
  4. Cook spaghetti in salted water until al dente; reserve 2 cups of pasta cooking liquid before draining.
  5. In a large skillet over medium-low heat, toss cooked spaghetti with the zucchini mixture, adding reserved pasta water as needed to achieve a creamy consistency.
  6. Stir in grated parmesan cheese until well combined. Adjust seasoning if necessary.
  7. Serve immediately, drizzled with more olive oil and extra parmesan on the side.
