  • 1.5 lbs beef chuck, cut into 1-inch cubes
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 tablespoons Madras curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric
  • ¼ teaspoon cayenne pepper (adjust to taste)
  • 1 tablespoon tomato paste
  • 1 (14 oz) can diced tomatoes
  • ½ cup beef stock
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Heat vegetable oil in a heavy-bottomed pot over medium heat until shimmering.
  2. Sauté the chopped onion until translucent (about 5 minutes). Add garlic and ginger; cook for another minute until fragrant.
  3. Stir in Madras curry powder, cumin, coriander, turmeric, and cayenne pepper for about 30 seconds.
  4. Add beef cubes; sear on all sides until browned.
  5. Mix in tomato paste and diced tomatoes; pour in beef stock and season with salt and pepper.
  6. Bring to a gentle simmer, cover, and cook on low heat for approximately 1.5 hours or until beef is tender.
  7. Stir in lemon juice just before serving.
