  • 1/4 C unsalted butter (softened)
  • 1/2 C granulated sugar
  • 1 large egg
  • Zest of 1 lemon
  • 2 Tbsp lemon juice (freshly squeezed)
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 1/2 tsp baking powder
  • 1 C all purpose flour
  • 6 Tbsp sour cream
  • 1 batch lemon curd
  • 1 C unsalted butter (softened)
  • 1/2 tsp vanilla extract
  • 1/3 C strawberry jam
  • 1/2 tsp strawberry extract
  • 1 drop red gel food color
  • 2 1/2 C powdered sugar
  • Fresh strawberries (for topping)

Instructions

  1. Prepare lemon curd and chill.
  2. Preheat the oven to 350°F and line a cupcake pan with paper liners.
  3. Cream softened butter and sugar in a bowl until fluffy. Mix in egg, lemon zest, juice, and vanilla.
  4. Combine flour, baking powder, and salt in a separate bowl; add alternately with sour cream to the wet mixture.
  5. Fill cupcake liners 2/3 full with batter and bake for 18-20 minutes until a toothpick comes out clean. Cool completely.
  6. Beat together softened butter, vanilla, strawberry jam, and powdered sugar for frosting; add red gel food color if desired.
  7. Core each cupcake, fill with lemon curd, replace the top, frost generously, and top with fresh strawberries.
