  • 8 ounces strawberries, halved
  • 1 large avocado, sliced
  • ½ small red onion, thinly sliced
  • ½ cup feta cheese (or omit for dairy-free)
  • ⅓ cup raw sliced almonds
  • ¼ cup chopped shelled roasted pistachios
  • 3 tablespoons balsamic vinegar
  • ¼ cup olive oil
  • 1 garlic clove, grated or finely minced
  • ½ teaspoon dijon mustard
  • ½ tablespoon strawberry jam (or jam of choice)
  • Freshly ground salt and pepper, to taste

Instructions

  1. In a mason jar or small bowl, combine the balsamic vinegar, olive oil, grated garlic, dijon mustard, and strawberry jam. Shake or whisk until well mixed. Season with salt and pepper to taste.
  2. Toast the almonds in a pan over medium heat for about 2-5 minutes until golden brown. Remove from heat and let cool.
  3. In a large bowl, layer the spinach, strawberries, avocado, red onion, feta cheese (if using), toasted almonds, and pistachios.
  4. Drizzle with dressing just before serving or serve on the side for individual portions.
