  • 3 cups fresh strawberries
  • 1/2 cup sugar
  • 1 lemon (juiced)
  • 1 lb. mascarpone cheese (room temperature)
  • 4 ounces cream cheese (room temperature)
  • 1 cup sugar
  • 3.5 oz package strawberry pudding mix
  • 1 teaspoon vanilla extract
  • 8 ounces whipped topping
  • 1 pint fresh strawberries (sliced)

Instructions

  1. Prepare the strawberry sauce by mashing fresh strawberries with sugar and lemon juice until juicy yet chunky.
  2. In a mixing bowl, beat together room temperature mascarpone and cream cheese until smooth. Gradually mix in sugar, pudding mix, and vanilla extract until well combined.
  3. Quickly dip Savoiardi cookies in the strawberry sauce (do not soak) and arrange half in a baking dish. Layer half of the cream mixture on top. Repeat with remaining cookies and cream.
  4. Cover and refrigerate for at least 4 hours before serving. Top with sliced strawberries for garnish.
