  • ½ cup butter (room temperature)
  • 1 ⅔ cups sugar
  • 2 eggs
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda

  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • 3 cups diced & peeled apples (approximately 2 large apples)
  • Optional: ¼ cup chopped pecans or walnuts

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, cream together butter and sugar until light; add eggs one at a time and mix well.
  4. Stir in vanilla extract then gradually combine dry ingredients into the wet mixture.
  5. Fold in diced apples and nuts if using.
  6. Pour batter into the prepared pan and bake for about 35 to 40 minutes until golden brown.
  7. While baking, prepare caramel sauce by melting brown sugar, half & half, and butter in a saucepan over medium-low heat until smooth.
  8. After baking, drizzle caramel sauce over the cake and return to the oven for an additional 10 to 15 minutes.
