  • 500g chicken breast, cubed
  • 1 tbsp olive oil
  • Salt & pepper, to taste
  • 1/2 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • 1 tsp cornstarch + 2 tbsp water, for slurry
  • 2 cups broccoli florets
  • Salt, for boiling
  • 1 cup jasmine or basmati rice
  • 2 cups water
  • Pinch of salt

Instructions

  1. Cook the rice in salted water according to package instructions until fluffy (about 15 minutes).
  2. Steam broccoli florets in a steamer basket until tender-crisp (about 5 minutes).
  3. In a non-stick frying pan, heat olive oil over medium heat. Sauté the cubed chicken seasoned with salt and pepper until golden brown and cooked through (5-7 minutes).
  4. For the teriyaki sauce, mix soy sauce, honey, rice vinegar, minced garlic, grated ginger, and brown sugar in a bowl.
  5. Pour the sauce over the cooked chicken and simmer for 2-3 minutes.
  6. Mix cornstarch with water to create a slurry; add to the pan and stir until thickened (about 1 minute).
  7. Serve by layering rice at the bottom of each bowl, topped with teriyaki chicken and steamed broccoli.
