  • 20 gyozas or potstickers
  • 1 tbsp vegetable oil
  • 4 garlic cloves (grated)
  • 1 tsp grated ginger
  • 4 cups chicken broth
  • 1 can (14 oz) unsweetened coconut milk
  • 1 tbsp low sodium soy sauce
  • 1 tbsp fish sauce
  • 1 tsp toasted sesame oil
  • 3 tbsp Thai red curry paste
  • 1 tsp brown sugar
  • 2 tbsp lime juice
  • chopped chives (for serving)
  • your favorite vegetables (optional, for serving)

Instructions

  1. Bring a large saucepan of salted water to a boil. Grate the garlic and ginger.
  2. In a large pot over medium heat, heat vegetable oil and sauté garlic and ginger until fragrant (about 30 seconds). Add chicken broth, coconut milk, soy sauce, fish sauce, sesame oil, brown sugar, curry paste, and lime juice. Stir and simmer for 5 minutes.
  3. Cook gyozas in boiling water according to package instructions (usually 2–3 minutes). Drain well.
  4. Serve by dividing gyozas into bowls and pouring hot soup over them. Garnish with chives or your favorite toppings.
