  • 250 g Bread flour
  • ¼ teaspoon Salt
  • 80 g Unsalted butter (room temperature)
  • 150 g Apples (peeled and diced)
  • 80 g Brown sugar
  • 60 g Unsalted butter (for filling)
  • 1 teaspoon Cinnamon

Instructions

  1. Prepare the dough by activating the yeast in lukewarm milk mixed with sugar.
  2. In a mixing bowl or stand mixer, combine flour and salt; add the yeast mixture and eggs.
  3. Knead in softened butter until smooth and elastic.
  4. Let the dough rise in a warm spot until doubled in size (about 1 hour).
  5. For the filling, sauté apples with melted butter, brown sugar, and cinnamon until tender.
  6. Roll out dough into a rectangle, spread apple filling, and roll tightly into a log.
  7. Cut lengthwise and twist to form the babka shape; place in a greased dish for the second rise.
  8. Bake at 350°F (175°C) for about 40 minutes until golden brown.
  9. Drizzle with syrup made from water, lemon juice, and granulated sugar while hot.
