  • 113 g unsalted butter
  • 200 g dark chocolate
  • 100 g brown sugar
  • 50 g granulated sugar
  • 3 eggs
  • 90 g all-purpose flour (sifted)
  • 250 g mascarpone cheese
  • 240 ml heavy cream
  • 2 tbsp espresso powder

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8 or 9-inch square baking tin with parchment paper.
  2. In a microwave-safe bowl, melt the dark chocolate and butter together in intervals until smooth.
  3. Stir in both sugars until combined. Add eggs one at a time, mixing well after each addition.
  4. Sift in flour and salt; fold gently until just combined.
  5. Pour batter into the prepared tin and bake for 25-30 minutes or until set.
  6. Once cooled, poke holes in brownies and pour espresso shots over them.
  7. For the topping, whip mascarpone, heavy cream, sugar, salt, vanilla extract, and espresso powder together until smooth. Spread over brownies and dust with cocoa powder.
