Ingredients

  • 1 1/2 cups chopped tomatoes (cherry or any variety)
  • 1 cucumber, peeled and diced
  • 1 avocado, diced
  • 2 tbs minced red onion
  • 2 tbs minced parsley
  • 2 tbs olive oil
  • 1 tbs red apple vinegar
  • Black pepper to taste

Instructions

  1. Chop tomatoes into medium dice or halve cherry tomatoes; place in a mixing bowl.
  2. Peel and seed the cucumber; dice and add to the bowl.
  3. Remove the pit from the avocado, dice it, and scoop out into the bowl.
  4. Cube feta cheese (if using) and add along with minced red onion and parsley.
  5. In a separate small bowl, whisk together olive oil, red apple vinegar, and black pepper until combined.
  6. Pour dressing over the salad mixture and toss gently to combine without breaking the avocado.
  7. Serve immediately for optimal freshness.
