  • 1 cup powdered sugar
  • 23 tablespoons lemon juice for glaze

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, mix sugar, oil (or butter), eggs, vanilla extract, lemon juice, and lemon zest.
  4. Combine wet and dry ingredients gently until just mixed; fold in grated zucchini.
  5. Pour batter into the prepared pan and bake for 50–60 minutes or until a toothpick comes out clean.
  6. Allow to cool before drizzling with the glaze made from whisking powdered sugar and lemon juice.
