  • 1 cup coconut vanilla extract (alcohol-free)
  • 1.5 cups all-purpose flour
  • 10 oz sweetened coconut flakes
  • 2 large eggs
  • 0.5 cup coconut milk
  • Vegetable oil (for frying)
  • 4 oz cream cheese
  • 0.5 cup powdered sugar

Instructions

  1. Soak pineapple rings in dark vanilla and coconut vanilla extracts for at least one hour, then pat dry.
  2. Set up three coating stations: one with flour, another with an egg-coconut milk mixture, and the last with coconut flakes.
  3. Coat each ring first in flour, then the egg mixture, and finally press into coconut flakes.
