  • 1/2 Tablespoon cornstarch
  • 1 large honeycrisp apple (peeled and cut into small chunks)
  • 3 Tablespoons brown sugar
  • 2 Tablespoons vegan butter
  • 1 Tablespoon lemon juice
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 cup vegan butter
  • 1/2 cup+ 2 Tablespoons sugar (½ cup for dough, 2 Tbsp for rolling before baking)
  • 1/4 cup brown sugar
  • 1 flax egg (1 Tablespoon (8 grams) ground flaxseed mixed with 3 Tbsp water)
  • 1 teaspoon vanilla bean paste (or vanilla extract)
  • 1 1/2 cups+ 1 Tablespoon all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Prepare the apple filling by cooking chopped apples with water, cornstarch, brown sugar, vegan butter, lemon juice, and pumpkin pie spice in a saucepan until softened. Let cool.
  2. In a mixing bowl, cream together vegan butter and sugars until fluffy. Add the flax egg and vanilla, then mix.
  3. Combine dry ingredients (flour, spices, baking powder, salt) in another bowl; gradually add to the wet mixture to form dough.
  4. Preheat the oven to 350°F (175°C). Scoop dough portions, flatten them in your palm, place a spoonful of apple filling in the center, then fold and shape into balls.
  5. Bake on parchment-lined sheets for 15-20 minutes or until golden.
