  • 240ml of dairy-free milk
  • 1 teaspoon of apple cider vinegar
  • 210g of self-raising flour
  • 50g of cocoa powder
  • 100g of caster sugar
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of bicarbonate of soda
  • 60ml of sunflower oil
  • 210g of dairy-free block butter
  • 200g of icing sugar
  • 20ml of aquafaba (chickpea brine)
  • 4 ground Oreo crumbs
  • 100g of dairy-free dark chocolate
  • White chocolate buttons
  • 1 pack of Oreo cookies

Instructions

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, combine dairy-free milk and apple cider vinegar; let it sit for 5 minutes.
  3. In another bowl, sift together self-raising flour, cocoa powder, baking powder, bicarbonate of soda, and caster sugar.
  4. Mix sunflower oil into the milk mixture; then combine wet and dry ingredients to form a smooth batter.
  5. Fill cupcake liners two-thirds full with batter and bake for 20-25 minutes until a toothpick comes out clean. Cool on a wire rack.
  6. Beat dairy-free butter and icing sugar until fluffy; gradually mix in aquafaba to achieve desired frosting consistency.
  7. Frost cooled cupcakes and decorate with ground Oreo crumbs and melted dairy-free dark chocolate.
