  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. Cut beef chuck into cubes and prepare aromatics: chop onion, mince garlic, and grate ginger.
  2. In a skillet over medium heat, add oil and sauté onion until translucent. Add garlic and ginger; cook until fragrant.
  3. Stir in red curry paste and spices; cook for another minute.
  4. Transfer everything to a slow cooker with beef cubes, coconut milk, beef broth, salt, pepper, and lime juice.
  5. Cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
  6. Adjust seasoning if needed before serving hot with garlic naan and fries.
