2 lbs beef chuck, cut into 1-inch cubes
1 tbsp oil (vegetable or coconut)
1 onion, finely chopped
3 cloves garlic, minced
1 tbsp fresh ginger, grated
2 tbsp red curry paste
1 can (14 oz) full-fat coconut milk
1 cup beef broth
Salt and pepper to taste
Juice of 1 lime
Instructions
Cut beef chuck into cubes and prepare aromatics: chop onion, mince garlic, and grate ginger.
In a skillet over medium heat, add oil and sauté onion until translucent. Add garlic and ginger; cook until fragrant.
Stir in red curry paste and spices; cook for another minute.
Transfer everything to a slow cooker with beef cubes, coconut milk, beef broth, salt, pepper, and lime juice.
Cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
Adjust seasoning if needed before serving hot with garlic naan and fries.
